Outside, this 1941-built diner car looks unchanged. But the inside boasts a massive makeover (cherry-red leather booths pop against rough woods), a better bar program (barrel-aged cocktails abound) and newly elevated spins on down-home grub from chef John Delpha. He rides the Mason-Dixon Line with jambalaya, St. Louis ribs and a groovy-grandma assortment of pies. But we also love his pan-Asian surprises, including a communal whole hog’s head glazed with gochujang BBQ sauce.
