Joshua Smith is setting the world on fire with New England Charcuterie’s array of globe-trotting salumi, charcuterie and fresh sausages, which now appear in hundreds of restaurants and retail outlets. His original modest deli and sandwich shop still offers the most obvious explanation of his success, in the form of oh-lawd-so-good sandwiches of pastrami, corned beef, bologna and Italian cold cuts, plus a staggering banh mi of sous-vide pork belly, pâté and smoked pork.
