Change of Tuna

Prepare to be bowled over: The private-dining area at Legal Sea Foods’ Kendall Square location is now Legal Fish Bowl, a fast-casual eatery that opened last month, serving signature and make-your-own bowls of tuna and salmon poke, along with cooked salmon, shrimp and chicken, atop beds of rice and veggies. The signature Tunanimous Choice is already a top seller, and a favorite of chef Rich Vellante, who enjoys the contrast of the warm steamed jasmine rice with the cool yellowfin tuna poke that has been marinated with a sesame-ginger vinaigrette. Radishes, roasted broccoli, a seaweed salad and nori furikake seasoning round out the dish, which is given some heat by a Korean gochujang sauce and kimchi. “The kimchi brings a lot of that fermentation because it’s marinated and fermented in chili sauce and garlic,” Vellante says. “It has a nice little crunch to it.”
