Sushi fuses American classics with Japanese influences, like the Boston-exclusive miso lobster roll. “We cooked the fresh lobster in miso butter to create a distinctive Japanese flavor,” says Nicholas Monks, general manager of the Seaport location, which marked the conveyor belt sushi spot’s first foray into the U.S. in 2016. A kick of togarashi spice and a zing of scallions balances the warm, buttery goodness served in a toasted brioche roll, making for a bite that feels familiar and fresh at the same time.
