Kreplach may have fallen out of popularity at some Jewish delis, but the butter-fried dumplings have a starring role at new Kendall Square eatery Mamaleh’s Delicatessen, which the team behind neighboring State Park opened in July complete with a market and full bar. The beef kreplach skew toward traditional roots with a sour cream dough base and stuffing made with braised brisket, onions, garlic, paprika and egg, but there’s a modern twist: a sauce of pickled shallots and horseradish sour cream and gremolata that gives each crispy bite a welcomed zing. “We wanted to adhere to a lot of the deli classics, while kind of reinventing them as well,” says chef/co-owner Tyler Sundet.
