Puritan & Company chef/owner Will Gilson was quite vocal about the toll this winter took on his business. Now he’s giving dinner patrons another good reason to stop in: an Italian sub pop-up in the restaurant’s adjoining Inman Square space. Every Saturday from noon to 2 pm, he hosts the Saturday Meat Market, offering a menu that includes sub shop classics such as cold-cut grinders, red sauce meatballs, cheese-stuffed sausages with peppers and onions, and his adaptation of Philly’s beloved roast pork: fork-tender shoulder meat with rabe, provolone, sweet Kewpie mayo and a crunchy pancetta chip.
