For Micole Rivera Suárez, the new chef de cuisine at the Ritz-Carlton’s Avery Bar and Artisan Bistro, the menu of small bites is her chance to showcase both new dishes and ones close to her heart, such as the tostones with garlic butter and cilantro-lime aioli ($9), crisp-edged disks of goodness that remind the chef of her native Puerto Rico. Peeled unripe plantains are soaked overnight and then fried twice before they’re tossed in garlic-infused olive oil that’s seasoned with sea salt and black pepper. “This flavor is home to me,” Rivera Suárez says. “We grew up eating this. It is the perfect buttery, salty, slightly crispy bite. I know nothing else that has this flavor.”
