A trio of recent college grads started a mushroom business. Sound shady? It is—at least by name. Self-taught cultivator Devin Stehlin teamed up with friends Nate Seyler and Leif Johnson, and the three created Shady Oaks Organics, a Newburyport-based greenhouse operation where they grow shiitake and five varieties of oyster mushrooms. They’re still in the startup phase (if you’re looking for a small business to pair with your Grey Doves), but their client list is impressive. You may have seen their blushing pink or dainty yellow caps featured at Menton, Beacon Hill Bistro or at your local famers’ market. So for your next creative dish, add color with something shady.
