

Will Gilson’s farm-to-table standby has built a loyal following by fusing modern technique with superb local ingredients in a tastefully rustic room. Repeat visits are rewarded by his devotion to the seasonal, but the re’s never a time of year when his smoking, curing and pickling skills don’t dazzle, as with his gor – geously smoky/peppery swordfish pastrami and creamy/earthy chicken-liver mousse that gains piquant contrast from rhubarb giardiniera. Pretty sure the Puritans never had it this good.
