

Thanks to a population of more than 11,000 Vietnamese-Americans, Greater Boston has a fantastic Vietnamese dining scene centered mainly in Dorchester. That includes at least a dozen great pho joints, including this Fields Corner newcomer, which wowed us with its free-range chickens sans hormones and antibiotics. Saigon Chicken roasts these into juicy, gloriously golden-skinned birds, an ingredient worth seeking out in a lot of dishes off its broad menu, and especially in brown (dark meat) leg-and-thigh chicken pho.
