Since opening in the Seaport in March, the counter-service spot has been wrapping the dish’s fresh-caught tuna and salmon with rice and nori, stuffing the roll with organic mesclun, purple cabbage and red radish slices before topping it with tobiko, a sweet soy sauce and spicy mayo. “You put the spicy Sriracha mayo in there to enhance the fish flavors and balance out the taste,” says chef Hank Lin.
