Inventor: Stoddard’s bartender Jonathan Buonomo
Ingredients: Salers, Bärenjäger and lemon juice, topped with pinot noir.
Taste: Made with gentian root, the French aperitif Salers has bittersweet notes. As for the honey liqueur, Buonomo says, “I wanted to add a little sweetness [while] adding a little booze. Salers is pretty low proof, [and] I didn’t want to make that wimpy of a drink.” The acidity of fresh lemon juice brings balance.
Bend the rules: Sure, there are plenty of sparkling wine cocktails, but Buonomo wondered, “Who wrote the rule? Why can’t you make a wine cocktail?”
What’s in a name: “I grew up watching a lot of cartoons, [including] G.I. Joe,” Buonomo says. If he had to guess, Lady Jaye, the undercover specialist born on Martha’s Vineyard, would order this drink. “She was a badass.”
Pair it with: “Anything with mushrooms,” or a vegetarian option. Buonomo suggests the root vegetable salad ($10), with carrots, beets, fennel and oranges.
Gettin’ crafty: The Downtown Crossing gastropub, a former late-19th-century corset store, focuses on craft beer, which Buonomo learned quite a bit about while tending bar at Bronwyn. “But we do honor that type of cocktail here as well,” he says. Drinkers will find three sections on their menu: Classics, tiki concoctions and contemporaries “where we get a little loose and get funky, let our personalities show.”
His personal mantra: “Try not to be too flashy, [though] there’s a time and place for that
too.”
