The West End’s culinary scene is set to rise with the addition of Popover King, a New England-centric cafe slated to open near North Station in mid-March. Hoping to tap into the tourist market that floods Faneuil Hall, founder/co-owner Coco Cabuquit-Love was inspired to provide travelers—and locals—with a taste of not simply popovers, but also a bit of Boston baking.
“The brand is largely about the rich culinary history of New England,” Cabuquit-Love says. “Our baked goods menu will feature New England specific breads and pastries—they will not be the typical items that you’ll find in regular bakeries around Boston.”

These traditional offerings will include options like anadama bread—which originated in Rockport—and Boston brown bread. The all-day menu will also highlight an assortment of popovers, like the Royal, a classic filled with lightly sweetened ricotta and topped with a maple and berry compote and a sprinkling of powdered sugar and crushed pistachios. There will also be savory varieties like the Jester, a cheese popover stuffed with a light cream cheese and topped with vegetarian bacon seasoning and parsley flakes. Heartier options will include dishes such as a rum tum ditty, named the French Traveler, made with bacon, crème fraiche, reblochon cheese and seasoned with truffle oil and herbs.
The cafe will also serve tea sandwiches daily from 3 to 5 pm, and it’s also partnering with Atomic Coffee Roasters on the North Shore. Cabuquit-Love drew inspiration from Parisian cafes when she designed the 43-seat interior, which features bistro-style tables and pillars covered in Venetian plaster and sconces. During the warmer months, Cabuquit-Love plans to open a sidewalk cafe with seating for 22 to lure the passers-by—if the smell of fresh popovers isn’t enough.
“As an artist, I saw popovers as a blank canvas,” Cabuquit-Love says. “I wanted to use my imagination as my only limit. There are just all sorts of stuff you can put in there and top them with.”
