The team behind the South End’s Kava Neo-Taverna is stripping down with Puro Ceviche Bar, a seafood spot that debuted in late May on Newbury Street. Puro serves a variety of small plates, but the main attraction is the ceviche bar, which turns out brightly flavored, prettily plated dishes such as the sea bass ceviche. Made with chunks of black sea bass, red bell peppers, chili peppers, red onion, cilantro, aji Amarillo, lime juice, olive oil and passion fruit, it’s a summery standout among a number of dishes that make use of the tropical fruit. “It’s a nice citrus fruit, which makes a really nice touch with the sea bass,” says chef Jesus Preciado. “It’s the perfect balance between the softness of the fish and the sweet and sour of the juices.”
