Gentlemanly paragon of hospitality Sahil Mehta oversees the bar at the South End’s lovely Madrid-style tapas restaurant Estragon, where a new full liquor license gives freer rein to his endless creativity and fine technical chops. But he’s also a wizard at crafting delectable booze-free cocktails like the Marrakesh Madness (cardamom clove syrup, lime, cucumber, mint, paprika and ginger beer)—a boon to teetotalers, smart drinkers pacing themselves and expectant mothers. Bonus tip: Mehta also runs the gorgeous new Bar Gogo next door, open only on Sunday nights.
