This irreverent Downtown Crossing gastropub got plenty of notice early on for its sloppy beef burger, but don’t neglect the just-as-strong veggie spin. Its patty is made from a blend of 12 ingredients—from sweet potato to black beans, wheat berries to Spanish onions. Then that sucker’s loaded with white cheddar, caramelized onions, housemade pickles and the same signature “Pop’s Russian” dressing used on the carnivore’s version. Just as tasty, lighter on the tummy: veggie, veggie good.
