At her new restaurant in Central Square, Tracy Chang wears her influences on her sleeve. Her menu incarnates her experiences at O Ya, Guchi’s Midnight Ramen, Paris’ Le Cordon Bleu and the Basque country’s Restaurante Martín Berasategui. As important, her food reflects a palpable passion for Spanish and Japanese cuisines, mostly in their classic forms, occasionally merged in subtle fusion. The results range from elementally simple to complex and ravishing. It’s a truly stunning debut.
