


When he closed his esteemed Providence restaurant Farmstead Inc. to launch Townsman in his native Boston, Matt Jennings brought with him a well-earned rep for nose-to-tail know-how. A three-time winner of Cochon 555, the Olympics of pig butchery, Jennings has a knack for creating impressive arrays of house-manipulated meats, complemented by wonders from Waltham’s New England Charcuterie. Venison-and-ramp terrine, confit duck hearts, beef-belly kielbasa and potted pork liver mousse with strawberries and pickled almonds are among the spectacular recent surprises. Go to town.
