Boston is upping its bagel game—and Exodus is leading the way. Cali-raised rocker Adam Hirsh calls his cold-fermented carb wheels “culturally Jewish, not religiously Jewish,” and he indeed replicates what works (flaky outsides, soft middles!) without slavishly adhering to tradition (hence the Sriracha cream cheese and creative sandwiches). Exodus distributes dozen-bagel “GrabSacs” through pop-ups, farmers markets and pickup at its Roslindale facility—which Hirsh hopes could one day be a full-service deli/restaurant. Godspeed.
