Oleana’s rep for delicious desserts—like its near-mythic baked Alaska—is a credit to executive pastry chef Maura Kilpatrick, who just received her fourth consecutive James Beard Award nomination. Young gun pastry chef Sophie Gees joined the team in 2016 and her positive impact is seen in the realization of elegant, exciting ideas like Turkish coffee parfait with candied chestnuts and cocoa-cardamom sauce, pistachio ma’amoul with olive oil ice cream and Middle Eastern-inspired sundaes.
