Looking for steak frites? Au revoir. Acclaimed chef/owner Tony Maws doesn’t do rote brasserie fare at this restaurant, celebrating its 10th anniversary as the sequel to Craigie Street Bistro. Rather, he applies classic technique to contemporary notions—like velouté of daikon radish, sirloin a la poele with sweetbreads and spinach, and confit and roasted pig’s head with a boudin noir-hoisin sauce. Maws’ famously beloved burger often steals food-world headlines, but his French-style sophistication is most formidable.
