The original Eventide in Portland, Maine, is a bright and modern update of the New England shore shack, offering crudos and a stocked raw bar as well as classics like fried seafood and lobster stew. Its new Fenway offshoot—in a darker, chic space with top-notch beer and wine offerings—goes fast-casual, with a slightly shorter menu of the same coastal hits, notably a lobster roll with brown butter on a Chinese-style steamed bao instead of a traditional Western roll. Canonical, it is not; but this lighter, fluffier incarnation lets the flavor of precious, increasingly pricey lobster shine through.
