The primal, popular charms of the skillfully grilled hunk of marbled beef are evidenced by the fact that Boston has at least 15 luxury steakhouses. But some are better than others. We favor local ownership, prime—and only prime—beef from boutique sources, the range to offer both costly dry-aged cuts and budget steak-frites, and a mountain of wines. That culls most of the chaff, leaving this clubby, venerable Back Bay institution alone atop the dais.
