They don’t have a phone number or a storefront yet, but Exodus Bagels still sell out fast. Jamaica Plain native and startup bagelsmith Adam Hirsch rolls, boils and bakes six varieties at CropCircle Kitchen until they’re deeply tanned, crackly on the outside and softly chewy within: New York-inspired but with character all their own. The seasonings are liberal (go for salt or seeded), and the lox-scallion and Sriracha cream cheeses are particularly good.
