Colette Wine Bistro uncorks French flavors on its menu with the wild mushroom vol au vent

Named after the same French author portrayed on the silver screen last year by Keira Knightley, Colette Wine Bistro opened in February in the Porter Square Hotel. The petite sister of Frenchie Wine Bistro, Colette pens its own story with dishes such as the wild mushroom vol au vent. “ ‘Vol au vent’ means fly with the wind, because this dish is very light,” says Sandrine Rossi, who along with Loïc Le Garrec co-owns the South End restaurant and this Cambridge spot—which takes poetic license with classic French dishes by infusing Italian flavors. We say oui to this dish that features thin layers of puff pastry filled with roasted crimini, oyster and shiitake mushrooms that are blended with a porcini cream.
