The recent cosmetic updates at Union Square’s beloved Independent are relatively minor, but the menu got a thorough makeover—especially in the case of the fried chicken. Under the guidance of consulting chef Patrick Gilmartin, from sibling restaurant River Bar and the bygone Staff Meal food truck, the classic Southern fry plate took a turn toward Nashville and picked up some heat. Now the craggy, crunchy pieces get a light brush of cayenne-spiked hot-sweet sauce and pickled jalapeno rings, which you can relish or relieve with sides of coleslaw and cornbread.
