The starting point of this central Chinese dish, a bowl of oily broth, is endlessly customizable with a la carte add-ins. Choose anything from squid or silky fish fillets to cauliflower or potatoes to wrinkly tofu skin (which happens to be a brilliant vehicle for sopping up the fragrant oil). Just don’t forget the rice.
