At Craigie, it’s the burger. But at Kirkland Tap & Trotter, chef Tony Maws’ pet project is the hot dog. The carefully calibrated link, which runs as a Monday night special, blends fatty cuts of premium pork and beef in an all-natural casing, and it usually comes grilled and nestled in a hearty house-baked pretzel bun with Kirkland’s housemade relish and mustard. But during the next four months the fixin’s will change, as Maws has an all-star lineup of local guest chefs dressing up the dogs. (First up in June: Ken Oringer.) Even more of an incentive: Half the proceeds will go to Share Our Strength, a national anti-hunger organization.
