At the North End’s rustic Forcella, chef Robert Morotto dreams up savory surprises with a risotto del giorno special. “Inspiration comes from many places,” Morotto says. “Whether it’s a stroll through the farmers market to scope out some seasonal ingredients or speaking with my purveyors to see what they have available—and then just having fun.” Since opening in December, he’s paired the creamy rice with pan-roasted sea scallops and an arugula-pistachio pesto, and served a combo of Manila clams with grilled vegetables and smoked sausage with applewood chips.
