Including lobster carbonara on the menu was a no-brainer for the team at Sapóre Ristorante + Bar, which opened at the Renaissance Boston Waterfront Hotel last month. As executive sous chef Wallace Christopher explains, “Having Italian and not having that on the menu is almost like a sin.” The result is sinfully indulgent. An entire Foley Fish lobster tail, claw and knuckle are mixed with crisp pieces of thick-cut black pepper bacon, heavy cream and a generous amount of Parmesan cheese before being folded into housemade garganelli pasta. A poached farm egg adds the perfect finishing touch.
