Bananas are the star of the show in the banana bread French toast on the Brassica Kitchen + Cafe Sunday brunch menu that launched in September. “I like to add more bananas than anything else so it really stands out,” head cook Brianna Bowering says of her bread, which she soaks in in eggs, milk, powdered sugar and cinnamon before it hits the griddle. She tops the toast with a scoop of maple butter and a griddled banana for good measure, but the dish gets added edge from another fruit: Aged Japanese plums, or umeboshi, are pickled and boiled into the maple syrup.
